Researching my historical novel to see what bitter drink a bishop in the south of France in the 1200s would have used daily, since tea wasn't an import until the 1500s.

I think the best choice would be beer made with "gruite" instead of hops. Gruite could be a mix of many kinds of herbs, and some of them could be very bitter. If this bishop liked bitter drinks, they could make sure he only had the bitterest, nastiest beer that no one else would touch. He could drink it and pat himself on the back for being so holy.
